Ginza is Tokyo’s swankiest shopping district. Its name literally translates to “Silver Mint,” a nod to its history as a silver coin mint since 1612. Today, Ginza is known for its upscale department stores and Michelin-starred restaurants, but as Frank explains, there is also a wealth of ramen shops to be found.
One of the best ramen in Ginza can be found at ABC Ramen. It’s a laidback shop (especially considering its location in ritzy Ginza), with a variety of izakaya foods on the menu, in addition to ramen. There, Frank tries two types of sesame ramen: majyanmen and majo miso jyanmen. The majyanmen is made with a soy sauce and sesame paste base, and vegetable broth while the majo miso jyanmen is richer, made with a miso and sesame paste base, and pork back fat. Both are served in suribachi (the Japanese mortar; literally “grinding-bowl”) which are typically used to grind sesame seeds in Japanese cuisine.
