During today’s Ebisu ramen tour, we are checking out two ramen shops which just opened recently in 2021. One a rich and heavy miso ramen bowl in a shop with a decadent design, the other a more classic shoyu ramen in old school chukasoba style, in a ramen shop mixed with a nostalgic worker’s class style bar. The first shop we went to was Miso Ramen Kakitagawa Hibari (味噌らーめん 柿田川ひばり 恵比寿本店), a shop which just opened in January 2021. It features a slick and modern decor, not exactly what you would expect in a ramen store. It underlines this with smooth jazz music in the background, clearly pointing to a more refined ramen experience. The shop itself is part of the Do Miso group, while sharing some similarities, it is definitely a lighter bowl of miso ramen.

The second shop is Stand Fuji (スタンド富士), opened in July 2020, which is going for a very nostalgic drink hall and cheap, filling food style restaurant. Drinks and food are cheap, but definitely good value. And of course, they are serving ramen here as well. A very interesting bowl of chukasoba style ramen, which means seasoned with soy sauce. It’s a bit what you would expect, and then again, it is not. Thick noodles in a quite sweet soup cause confusion and probably delight for some. I can imagine this being a very good closing bowl for the night. Stand Fuji is open until 4am, so that should be enough time to make your way here.
