Some things to know about Kumamoto tonkotsu:
Compared to the more well known white Hakata tonkotsu, Kumamoto tonkotsu usually looks a bit more brown-ish. That’s due to the quite punchy shoyu tare seasoning, compared to the lighter seasoning of Hakata tonkotsu. The other distinguishing feature is the use of garlic or garlic oil as a central topping element. While black or burnt garlic oil is the most well known variant, there’s also the brown fried garlic variant like in this bowl.
