Kaiseki is the traditional course meal of seasonal and regional ingredients cooked in a variety of methods. One of the best places to have a kaiseki meal is at a ryokan (Japanese-style inn). This one we went to was in Kuroyu Onsen in Akita Prefecture. Akita is on the northwest part of Honshu and is famous for rice, sake, ayu (fish) and a unique udon called Inaniwa Udon.
