I got the chance to see behind the scenes at a pufferfish/blowfish/fugu factory, where they prepare this toxic sea creature that is the symbol of the city we visited, Shimonoseki, Japan. Later on, I then had my very first taste of the puffer fish at the most fancy restaurant, Heike Jaya, a place that has been visited by the likes of former Japanese Prime Minister, Shinzo Abe.

Fugu is Japanese for pufferfish/blowfish and can be lethally poisonous due to its tetrodotoxin, so trained chefs must carefully prepare the fish to remove the toxic parts without contaminating the meat. Preparation, both in restaurants and factories are strictly controlled by law in Japan, so only qualified chefs are allowed to prepare the fish.
