Slurp’s Up presenter Frank Striegl visits Transforming Now (Tadaima Henshin-chū), a French-inspired ramen shop in Nakano, Tokyo to try two bowls: their Red Snapper Soy Milk Ramen and the Spicy Oyster Ramen.
The first bowl is their Red Snapper Soy Milk Ramen with a frothy soy milk and sea bream soup topped with balsamic vinegar and oyster sauce. The noodles are on the slightly thinner side, and the toppings include rusk, tender chicken and pork chashu slices, broiled oyster, tobiko (flying fish roe), and spinach.
Next up is the Spicy Oyster Ramen from Transforming Now. Frank chooses level 2 spice (from 1-3). The soup is that same soy milk and sea bream base, but with a punchier seasoning and a mountain of togarashi chili pepper flakes in the corner.
