Yamamoto Brewery in Akita’s Happo town uses fresh water from UNESCO World Natural Heritage Site Shirakami Sanchi, locally produced rice, and Akita sugi (cedar) to create a smooth and unique-flavored Japanese sake that is “Fukuhachi Sake.” Thanks to the area’s snowfall, this sake can be preserved in an outdoor tunnel without change to its taste.
