熊本の郷土料理の1つに「太平燕（タイピーエン）」という中華料理があります。白湯（ぱいたん）スープにたっぷり野菜、そして麺に使われているのは、なんと春雨…！熊本で生まれたこの不思議な中華料理、珍しい上にヘルシーでおいしいと観光客からも人気を集めています。
そもそも「太平燕」って、どんな料理？
熊本人のソウルフードの1つである「太平燕」。熊本で生まれた中華料理とされ、県内にあるほとんどの中華料理店でラインナップされているレギュラーメニューです。
そのルーツは、中国・福建省にある同名の料理「太平燕」だそうですが、現地ではアヒルの卵と肉団子が入ったスープのことを指し、旅立ちなどを祝う時に食べる料理。熊本の「太平燕」とは全く違うものだそうです。
「1930年代頃に、福建省から熊本に渡ってきた華僑の方が作り始めたのが、熊本の太平燕の始まりとされています。お祝い料理の1つとして食べられていて、春雨が高級食材・ツバメの巣に似ているのと、『太平（平和）』というおめでたい名前が合わさって、この名前になったといわれています」
その後、熊本の中華料理店で定番麺メニューとして広まっていったのだそう。

Located in Kumamoto Prefecture here in Tamana city, a cosy simple restaurant that serves delicious Chinese food. It’s really hard to find a nice that serves decent Chinese food and if you are a fan of Chinese food, you should not miss trying this place.
There are so much choices you can choose here and I’ll like to share about the noodle dish by the name of taipien (太平燕) which is one of the soul food in Kumamoto. And wonder what exactly is that?
Its one of the soul food of Kumamoto people. It is said to be a Chinese dish that originated in Kumamoto and is a regular menu item at most Chinese restaurants in the prefecture. It is said to have its roots in the Chinese dish of the same name from Fujian, China, which is a soup of duck eggs and meatballs. It is said to be completely different from the Kumamoto Taipien.
In the 1930s, an overseas Chinese who came to Kumamoto from Fujian province began to make the taipien which is said to be the origin of the Kumamoto Taipien. It is said to have been eaten as a celebratory dish, and its name came from the combination of vermicelli, which resembles a high-class swallow’s nest, and the auspicious name ‘peace’.
Later on, the noodle dish became a common item listed on the menu at Chinese restaurants in Kumamoto.
