Chasing a Plate Cooks is all about recreating street food and dishes we have eaten on our travels in our home kitchen. Today we’re recreating an epic Turkish kebab platter we ate in Istanbul, Turkey. This kebab platter was made up of chicken wings, Adana kebab, sis kebab (which we didn’t make), salads, lavash and grilled vegetables. This kebab platter was memorable because the produce used was fantastic, the flavours showed off the best of Turkish ingredients and the people were so welcoming and friendly.

Make a kebab platter at home:
Ingredients (serves 4-6)

For the red pepper paste
Roasted red peppers
Paprika
Lemon juice
Salt

For the Adana kebab
Lamb mince (a mix of lean and fatty meat would be ideal)
Chilli flakes
Salt and pepper
A splash of cold water

For the chicken wings 
Chicken wings
Red pepper paste (see above)
Chilli flakes
Salt and pepper
Paprika

For the parsley, red onion salad:
Thinly sliced red onions
Flat leaf parsley
Lemon juice
Sumac
Salt and pepper

For the onion, tomato, parsley salad
Thinly sliced onions (we used brown)
Diced tomatos
Flat leaf parsley
Pomegranate molasses
Lemon juice
Sumac
Paprika
Salt and pepper

For the lavash
1 and 2/3 cup of flour
1 tsp salt
 2/3 cup of warm water
2 tbsp olive oil
