Located in San Francisco’s Japantown, Ramen Yamadaya is a Southern California-based chain that specializes in tonkotsu ramen. The broth is cooked with pork bones for about 20 hours of boiling to extract the rich, genuine flavor as much as possible. The signature tonkotsu is salt-based in a classic Kyushu style, while the tonkotsu shoyu is soy sauce-based in a Tokyo/Yokohama style.
