When referencing global foods and cuisines, Japan plays the role of both pioneer and staple. Tokyo, Japan’s epicenter, proliferates some of the best food in the world, both inside and outside the scope of traditional Asian cuisine. The quality of sushi and sashimi are so vastly superior that any question of otherwise is not only rhetorical, but rude. “But what about pizza?” The preceding mantra quickly emerged as my feet were gaining familiarity with this new foreign land. Wagyu; Sake; Tuna – obviously the verdict was preordained before any restaurant or meal was chosen. But what about pizza? Well, one entire day was dedicated to answering that question…
