Though its origins are Chinese, Beef Noodle Soup is considered the national dish of Taiwan and given a distinctly Taiwanese spin with the addition of pickled mustard greens and signature five-spice powder. The combination of slowly braised beef and slurpable noodles seems so simple but every restaurant has its own closely guarded secret recipe with variations in broth, noodle size, and meat quality. There are so many beef noodle restaurants, including those you can find at night markets, but here are four spots I tried and highly recommend.
