Menya Shichisai is co-owned by Yoshihiko Fujii and Hiroaki Sakata. Every batch of noodles are pounded, kneaded, squeezed and cut by hand. When you take your seat at one of the counter seats, you can watch the noodle master prepare your noodles right in front of your eyes. Because the noodles are not pre-prepared, do expect slightly longer wait times for both the queue and for your order to arrive. But it’s worth it.
You may have already heard of Hakata ramen or Sapporo ramen (Kyushu and Hokkaido respectively). Kitakata ramen is another popular ramen that originates from Kitakata City in Fukushima Prefecture. The city is well known for having the highest concentration of ramen shops per capita in all of Japan.
