Michelin recommended ramen at Mendokoro Bigiya. Their fantastic shoyu ramen has earned them the Michelin “Bib Gourmand” recommendation, already some years ago. And yet, they have managed to keep their quality on a very high level since then and still prepare bowls that leave you speechless after the first slurp. Mendokoro Bigiya is located at Gakugeidaigaku Station (学芸大学駅), a short 8 minute train ride away from Shibuya station via the Tokyu Toyoko line.
Their shoyu ramen uses a chicken and fish broth as a base, which is super complex in flavors due to all the different pieces of chicken and the quite large variety of fish that is used. The flavor profile is rounded up with some pork bones, which surprisingly do not make the broth cloudy. Their shoyu tare consists of a blend of different regular soy sauces from different regions in Japan, as well as kanro soy sauce which is a double brewed soy sauce variety.
By the way, Mendoroko translates into “noodle place”. That’s really what it is. The noodles come from the great noodle maker “Murakami Asahi Seimen”, easily one of the best noodle suppliers in the Tokyo area. They really add to the bowl without distracting you too much from the star of the show, the broth.
The toppings are top notch and plentiful, especially if the “all toppings” option is selected. I would absolutely give that one a try, if you already made it all the way to the shop, as it is only 1.000 Yen. This bowl includes regular chashu, a chinese style red pork belly piece, sous-vide chicken and a simply perfect and creamy ajizuke tamago (marinated egg).
I can easily recommend Bigiya to all ramen lovers, especially to the ones who like shoyu ramen, but wish that more complex and deep shoyu ramen would exist. That”s one of the places to find that right here!
