But beyond the statistics, there is a flavor here that defies expectations.
“A Revelation for the Fat-Averse”
To be honest, I’ve always avoided fatty cuts of meat. Whether it’s Tonkatsu or Shabu-shabu, I usually order the leanest fillet because I find fat to be heavy and overwhelming.
However, Kagoshima’s Kurobuta (Black Pork) changed everything for me. The loin here was a complete revelation. The fat wasn’t greasy—it was remarkably sweet, clean, and melted away instantly. It truly redefined my understanding of what pork can be.
“The Smoky Power of Jidori Chicken”
And then, there is the Jidori (local chicken). Unlike the melting texture of the pork, the chicken here is all about “texture and aroma.” At the local Izakaya, the chicken is seared over powerful charcoal flames, infusing it with an incredible smoky fragrance. The meat is resilient and chewy, releasing intense umami with every single bite.
Trying “Tori-sashi” (chicken sashimi) was another highlight—a unique local delicacy that you can only truly experience in Kagoshima due to the absolute freshness of the meat.
