The Grand Hyatt Jeju inside the Jeju Dream Tower Complex Resort will present Omakase, a Japanese iron plate dish that only 12 people can taste every day.
According to Lotte Tourism Development on the 27th, the Grand Hyatt Jeju Japanese restaurant “Yumeyama” will offer a new Teppanyaki Omakase, overseen by chef Jun Kakazu from Naha, Okinawa Prefecture, Japan.
Tefanyaki Omakase is a traditional Japanese iron plate dish served by chefs cooking ingredients on an iron plate on the spot using the freshest ingredients of the day. It will be presented only for 12 people per day, and the menu will be operated in 7 courses and 9 courses. Each price is 200,000 won and 310,000 won per person.
A Grand Hyatt Jeju official said, “Chef Jun Kakazu has qualified as an ‘Awamori Meister’ certified ‘Ryukyu cuisine transferee’ and distiller expert certified by the Okinawa Prefecture branch,” adding, “You can now enjoy the popular menu, Tepanyaki, in Jeju.”
Among the courses, the signature welcome menu, “Jimami Tofu,” is a reproduction of peanut tofu, a traditional Okinawa court dish, using Jeju peanuts. Jimami means ingredients from the region, and it can be said to be a symbolic dish that connects the food cultures of Jeju and Okinawa.
“Korean Beef Sirloin” uses only the top-notch Korean beef 1++ rating, so it has a rich marbling and soft texture. The juice was trapped with a searing technique that quickly cooks the surface on a high-temperature iron plate, and the original taste of Korean beef was preserved.
In addition, you can enjoy four types of menus, including abalone, grilled road aburi, Korean beef sirloin, and grilled crabfish. Abalone and Road Aburi is a warm sashimi enjoyed on the iron plate, maximizing the chewiness and softness of Jeju abalone and the flavor of the best tuna belly road.
