Japanese Yaki Mochi

Ingredients:

– 250g mochiko (sweet rice flour)

– 200ml water

– 2 tablespoons sugar

– Soy sauce, for brushing

– Optional toppings (e.g., bonito flakes, chopped green onions, or sesame seeds)

Instructions:

  1. In a bowl, mix the mochiko, sugar, and water until smooth.

  2. Transfer the mixture to a lightly greased microwave-safe dish. Microwave for about 2-3 minutes or until cooked through and chewy. Stir halfway through the cooking time for even texture.

  3. Remove from microwave and let it cool slightly. Once cool enough to handle, knead the mixture on a clean surface for a minute to make it smooth.

  4. Divide the dough into equal portions (about 8 pieces) and shape each piece into a round cake, about 1/2 inch thick.

  5. Preheat a grill or a large skillet over medium heat. Grill the mochi cakes for about 2 minutes on each side until they develop a golden-brown crust.

  6. Brush each side with soy sauce while grilling for added flavor.

  7. Serve warm, with optional toppings as desired.
