
I've had Japanese potato salad in different variations, but I've never had it with parmesan cheese. This also had crunchy bits in it. At first I thought it was bacon, but it didn't have that smoky flavor. I'm guessing it might have been fried chicken skin. Need to try and recreate it, as it was some of the best potato salad that I've eaten.
