This is my new series called Tokyo on Ten and 1 of 10 is Wagyu Ramen Goku, located in Shibuya just up Miyamasuzaka. This is wagyu ramen is fire and better yet it is under $10. The man behind it is Tetsuya, and he may look familiar. He was actually featured in my Day in the Life of a Japanese Ramen Chef video that I filmed six years ago. When I first ate here, I didn’t even realize he was the owner. After digging a little deeper, I found out this was his shop, which the experience even better. His ramen is made using 100% wagyu beef. Perfecting the recipe took years, mainly because balancing the natural umami from wagyu fat was extremely difficult. Too much made the broth heavy, while too little left it flat. Through constant trial and patience, he eventually found the balance he was aiming for. The rich wagyu paitan broth is blended with garlic and ginger, paired with a soy based tare infused with kelp and shiitake. It is finished with a signature oil and served with custom medium thin dry noodles designed to stay firm and enjoyable until the last bite.

I feel like wagyu ramen here in the US would be like $60/per bowl 😂
Lately, Japan’s been packed with foreign tourists, and there are tons of places that feel like they’re straight-up overcharging them.
“Wagyu” has basically become the go-to word for ripping tourists off. But this ramen spot has prices even locals can casually walk in and pay, so it actually feels legit.

Ramen is delicious, isn't it? Japanese rice is delicious! There are a lot of things that foreigners don't eat, such as natto, I really want everyone to know more about Japanese culture.😂
