At Kitan In, Hiro-san portions each slice to the same thickness before placing it on the Yakiniku grill for just 20 to 30 seconds. No guessing, no overcooking. Each cut is grilled exactly to its recommended temperature.

The course moves through many different dishes, and toward the end comes Kitan’s interpretation of Yakiniku. Unlike most Yakiniku restaurants, where guests do the grilling themselves, here you simply sit back and enjoy. Hiro-san and his team handle every cut, every second on the grill.

The result is consistency, balance, and a deep respect for the beef.
