Ruggiero believes that authentic Italian cuisine is rooted in respect for ingredients, the seasons, and the people who share the table, and that it is linked to memories of the flavors and warmth of Italian homes. Based on authentic Italian techniques, for the first time, he has incorporated “family recipes” from his hometown into the menu.
“Being able to offer my family’s flavors, including my grandmother’s always-made dishes like Cavatelli al Ragù di Maiale della Nonna (pasta with pork ragu) and Polpette al Sugo (meatballs in a slow-cooked tomato sauce), at Hilton Kyoto means I can share a part of my roots with guests, and that brings me great joy,” he says.
