Today I am going to show you how I meal prep for my work trips. I try to cook healthy whenever I am home and I also try to bring my own food whenever I go on short-haul trips.
I hope you enjoyed my recipes (honestly, I don’t really use recipes for cooking, I just cook whatever I feel like, that’s why the measurements aren’t exact, but I feel like you can’t really mess these recipes up).
Roasted vegetables:
1/2 zucchini
3 carrots
1/2 hokkaido pumpkin
Oil
Salt
Pepper
Chile lime seasoning
Cut all ingredients into bite-size pieces and fill them into an oven-proof container. Add oil and season to taste. Pre-heat oven to 200°C (400°F) and bake for 30 minutes.
For sauce:
1/2 onion
1 garlic clove
1-2 tbsp. flour
1-2 tbsp. butter
400 ml (14 fl oz) milk
1 cream fraiche package
Salt
Pepper
Melt butter in a cooking pot and add the diced onion and minced garlic. Fry until they turn a golden brown color. Add flour and stir well. Add milk and stir well. Add cream fresh and stir.
Beef with broccoli and rice:
1/2 onion
2 garlic cloves
2 cups water
1 cup rice
200g (1/2 lb) ground beef
2 cups frozen broccoli
1 tbsp. oil
1 tbsp. maple syrup
1 tbsp. soy sauce
Juice of 1 lemon
Salt
Pepper
Bring the water to a boil and add the rice. Cook according to the instructions on the package.
Heat the oil up in a frying pan and add the onion and garlic. Fry until they turn a golden brown color. Add the ground beef and cook until done. Add maple syrup, soy sauce and the lemon juice and season with salt and pepper. Cook the broccoli for about 5-8 minutes.
