

Was digging through my freezer and found some duck bones, so I ended up using those instead of chicken bones for the dashi. It actually turned out really nice.
And hmm… from what I’ve researched, Akita uses a lot of seri in their stewed dishes. Might have to revisit this prefecture in the future once I can get my hands on the real herb!
