Today we enjoyed this cut at Yakiniku Carosso in Wakayama.

Miyagi is one of Japan’s leading rice producing regions, and cattle here are often finished on rice straw from the same local farms. Climate also plays a key role. Winters are cold and summers stay mild, which slows growth and allows cattle to develop without stress.

Miyagi was also one of the first regions in Japan to adopt strict carcass evaluation and traceability systems. This long history of structured grading shows how environment, feed and regional tradition shape the character of Miyagi Wagyu.
