Then one sushi chef from Osaka, Yoshiaki Sharishi, thought, “What if everyone could enjoy sushi?” One day, while visiting a beer factory, he saw bottles gliding along a conveyor belt. And in that moment, they looked like sushi. From his small restaurant in Osaka, the world’s first conveyor belt sushi was born. Sushi that once had to be made to order could now be prepared in advance and placed on the moving rail. Customers no longer waited. They picked what they wanted. Labor costs dropped. Prices fell.
