  2. Great video, Shizuka is a strong host as always and the featured chefs were insightful – but along the lines of some other comments, i think the background music volume could come down 30-50%

  3. I always enjoy your videos but this ramen place is horrible. I have been to Japan many times like over 50 trips and this is the worst ramen Iโ€™ve ever had. Maybe if it did not have all the michelin hype I would have thought itโ€™s below average but not plain horrible. The noodles was soggy like overcooked and the special plate didnโ€™t compliment the noodles. Itโ€™s just some overpriced too salty meat and I donโ€™t know what. I paid a booking fee on table check having high hopes but for the first time in my life I finished half a bowl and thought thatโ€™s fine I wonโ€™t waste stomach space to eat this. Seriously I donโ€™t get the hyoe and I am a ramen person. I always find different ramen places from tabelog to try when Iโ€™m in Japan but this is plain disappointment.

  4. Tsuta hs some light tasting Ramen if you like strong flavored Ramen u might like this. Tsuta didnt survive the taste of the people of the philippines thats why they close shop there

I think Michelin was in a bit of a rush to try and democratise their ranking system and were somewhat premature in giving stars to the likes of the ramen places in Japan and the hawker stalls in Singapore. Really difficult to square that with a tasting menu costing several hundred quid elsewhere. Removing the stars looks like a negative reflection on the restaurants/stalls, whereas it was more about Michelin realigning itself to what it probably should have been from launch in these Asian markets. Shame as the Bib Gourmand has existed since 1997 and was pretty clearly the better match for this sort of place. I went to Ryutenmon in Ebisu a few years before it earned a star in the inaugural Japan Michelin awards and wasn't convinced it was star worthy at the time, but I do think Michelin took a few years to find its feet in Japan and elsewhere in Asia.

    Parasites are integral in what-meats we are better to steer-clear-of. I would prefer nobody ate beef either, but… all things in time, and in God's will/plan/purpose.

  9. Japanese ramen could benefit from lowering the sodium content in its broth. Additionally, relying less on the traditional dashi base would help diversify the flavor profiles, as many broths tend to taste too similar. It's time for Japan to move beyond textbook recipes and embrace more adventurous, distinctive flavors that set each bowl apart.
