I could not find a generic recipe in English but like this one only in Japanese (https://delishkitchen.tv/recipes/556686896483271809). Kakuni (Cooked cube meat of ….) in your photo is served with mustard. The recipe is simple enough, I hope.

It was chicken? It’s usually pork belly or pork shoulder I thought. It’s delicious either way I bet and yes it’s basically braised in dashi and aromatics.
