I might have cooked the eggs a hair too long on this. Sadly I messed up on the Demi-glacé, so that’s gonna have sit out for today.

    That looks about like my first handful of attempts. 

    Next time try a lower heat. It makes for more control and fluffier eggs. I go with a setting between medium and low but a nudge more towards low.
