With scallion and soy marinated egg yolk on top. Caught a few big trout at the end of the season and turned their roe into my favorite Japanese dish

    Woah, I didn’t know the roe filled them up like that and there’s so much for one fish. I was picturing a little pocket or something. Super informative post and also incredible work. Gorgeous.

    Homemade Ikura is amazing. A little labour but simple and makes you realize what a shame it is that so many fishers in North America throw the roe out. I’m lucky to get plenty of wild salmon roe sacks given to me.

    (Now look up Milt and get some of those!)
