   Is this beef tongue or cheek? That reminds me of the kichi Kichi beef tongue stew which is as said above a demiglace like sauce. It’s just stewed for a stupid long time.

   Beef Stew VS Red-wine-beef stew are very similar and even though it didn’t come from Europe, we have this 欧風 versions – but baseline is same.
