I lived in Taiwan for 2.5 years and this was my favorite food in the whole world that I purchased from a Japanese curry house. I am trying to find out the dish name and maybe a recipe. TYIA!
It’s different than the traditional Japanese curry that was just the brown/reddish sauce with the potatoes and carrots. It was more “gelatinous” and tasted sweet but mildly spicy!

It’s kind of hard to tell from the image, but if it’s still a curry (and not hayashi rice, like the other commenter said), it could be a type of Japanese black curry/kurokare/黒カレー.
