I wanted to make miso soup. I unfortunately don’t have access to a car at the moment, so I thought I’d look to Amazon since they have things like Amazon fresh now.

I tried putting some miso into water to taste the broth. And I ended up getting this unpleasant apple cider vinegar-like taste. I am unknowledgeable of what miso paste should look like. So I’m wondering if this was human error, or is something wrong with the paste itself?

I noticed a dark patch in the corner so I included it in the photo

    idk abt you, but my miso who has been sitting in a fridge for at least half a year, maybe even a year is fine. could be dangerous, but i still live. if it tasted off for you, maybe don’t consume it

    I’ve just bought this exact miso from Amazon, (colour of mine is slightly darker) delivered today. There was an oily residue around the lid, the peel-back lid was slightly opened, so it has leaked a bit. Probably happened in transit. But the best before date is the end of November, I definitely will not use it by then. Mines gone in the bin.

  5. Miso can be stored for years. It has so much salt in it that any bacterial process that might happen, will be very slow.

    Miso also has vastly different flavors depending on ingredients, age, process, storage temperature, ratio of ingredients etc. etc. etc.

    We store ours in the freezer for years (it doesn’t freeze solid it just gets cold).

  6. I have the same Miso and it’s just generally gritty like that. The miso tastes fine in soup but make sure you smell it first to be sure.

    Weird thing to be concerned about in my mind. You probably just didn’t like this Miso if you literally just got it it’s almost guaranteed fine unless something happened in the manufacturing or shipping process which I guess is possible but doesn’t seem like it would result in what you describe. I’m sure the miso is completely fine, but probably just a shit miso. My advice is don’t order this type of stuff from Amazon

    Apple cider vinegar sounds strange. Are you sure it’s not your water?
    I buy the same miso and keep it for ages, ate it way past its best before date as well. It cannot really go sour due to the salt.
    Could be a bad batch?
