Tramuntana elegance.

In Valldemossa’s UNESCO-listed Sierra de Tramuntana, De Tokio a Lima is a gastronomic revelation. Chef Germán de Bernardi presents Japanese precision, Peruvian zest, and Mallorcan soul, to create dishes that linger like a Mediterranean sunset. This is dining as a fine art, where every bite tells a global story.
With the Charterhouse’s historic backdrop, the ambiance marries rustic charm with intimate elegance. Earthy tones, soft lighting, and valley views evoke a feel of serenity, perfect for those passing through to savour both nature and culture.
The menu, rooted in local ingredients and Japanese and Peruvian recipes, pleasantly surprises with its creativity. Starters like the Trilogía Nigiri – scallops in tiger’s milk, Iberian pork with mango, and truffle-crowned quail egg – all burst with flavour. Mains, such as the beef tataki with crisp potatoes, asparagus, and orange sauce, balance richness and freshness. Desserts, such as the airy lemon tart with meringue and sorbet, perfectly capture Mallorcan summers.

The wine list is thoughtfully curated, and features crisp Mallorcan Prensal Blanc and robust Tempranillos to complement the boldness of the flavours.
Tasting menus range from €80-€120 per person (excluding drinks), with starters at €18, mains at €35, and desserts at €12-€15. It’s a bit of a splurge, but the artistry and sourcing justify the cost.
