Every morning, we carefully grind buckwheat in-house using a traditional stone mill.
Our soba artisans handcraft noodles that are rich in aroma and smooth in texture, perfectly matched with our sweet-savory dipping sauce made from premium dashi and aged soy sauce.
One of our signature dishes is the “Oroshi Ten Seiro” featuring shrimp and seasonal vegetables served tempura-style, dipped in soba sauce for a classic Edo-style indulgence.
The light, crispy coating and seasonal flavors enhance the depth of the soba.
