In the heart of Tokyo’s Marini district is Nihonbashi Kaizen, an amazing seafood dumbori restaurant. This is where they pile on sea urchin, tuna, salmon row, and many others on top of a raised bowl. Once you have about 1/3 of the bowl left, they add a broth. You add this delicious tuna, and you’re left with an amazing soup. Cheers. [Music]
