The all-day dining restaurant “Haskap the Garden” on the first floor of ANA Crowne Plaza Hotel Chitose will be hosting a “Sweets & Lunch Buffet Matcha and Pink” from Monday, September 1st to Monday, October 13th, 2025.
Matcha that has matured through the new tea season changes to a mellow flavor in autumn, and its sweetness and umami become even more pronounced. This buffet will use plenty of matcha, which is in season at the moment, and will feature sweets and lunch dishes with richly fragrant matcha and a lovely pink color.
The dessert menu includes a wide variety of items, such as the “Matcha Cheesecake,” a luxurious combination of matcha and rich cream cheese; the “Matcha Opera Yuzu Flavor,” a Japanese take on the famous French opera confectionery, made with matcha and yuzu peel; and the adorable “Framboise Mousse and Matcha Cream Mini Parfait Shiso Flavor,” a fragrant raspberry mousse kneaded with shiso and layered with matcha chantilly cream.
For the food, Akinori Yamamoto, head chef at Haskap The Garden, will be preparing a menu of dishes from around the world that incorporate matcha. From the open kitchen, freshly fried tempura will be served, with a dish that can be enjoyed as “dashi chazuke” by pouring dashi over it. Guests can also enjoy a variety of Japanese and Western flavors, such as “Matcha Cheese and Green Laver Carbonara,” which combines matcha and cheese and adds a fragrant accent with green laver.
Pastry chef Takashi Naito says, “Matcha has a subtle bitterness and aroma that is appealing, and it shows off a variety of different expressions when combined with seasonal ingredients and colors. This time, we combined it with a lovely pink color to create a sweet that will make your heart leap the moment you see it.”
