Hailing from Kyoto, Gyukatsu Kyoto Katsugyu was founded in in 2014 and has since grown into the largest gyukatsu speciality restaurant from Japan. Diners are drawn in by their beautifully crisp, medium-rare beef cutlets with perfectly marbling.

The steaks are handpicked from choice cuts of prime beef. Each steak is coated in a koromo batter made from a secret blend golden ratio of bread crumbs, flour and egg wash. It is then deep-fried to medium-rare perfection at a precise temperature in fresh oil that’s changed daily to yield clean, crisp flavours.

We recently tried some of the cuts at Gyukatsu Kyoto Katsugyu at their new One Holland Village outlet.

One of the popular sets avaialble at Gyukatsu Kyoto Katsugyu is its Signature Half-and-Half Gyukatsu Zen set. This pairs together Sirloin with either Tenderloin, Beef Tongue, Chuck Flap, or even prized Miyazaki A5 Sirloin, allowing diners to sample different cuts of meats.

We order the Signature Half-and-Half Gyukatsu Zen set with Sirlion and Tenderloin.

The Sirloin is a classic Kyoto Katsugyu Gyukatsu cut. We bit into it and it was  both tender and juicy. Apparently, this is achieved by precisely cooking the meat at a low temperature to lock in all the succulent beefy goodness.

The Tenderloin is a lean protein option and comes in a thicker cut. We always love a good tenderloin and the cut at Kyoto Katsugyu Gyukatsu was a succulent and juicy bite.

There is the option to sear the steak on the konro too.

Different Condiments to go with the Gyukatsu

Complementing the cuts of meat were a variety of condiments. There was the choice of fresh wasabi, which can be added to Dashi Soy Sauce for a hit of umami. Sansho Pepper Salt adds a slight citrusy tang. Completing the trifecta of sauces is the sweet Gyukatsu Sauce.

For more flavour combinations, the gyukatsu can also be dipped into Kyoto-style Curry or a creamy Signature Onsen Egg.

Personally, we found that the meat was so flavourful in itself that we enjoyed with some wasabi alone or with a slight dip into the Dashi Soy Sauce.

The sets come with rice (refillable), cabbage (refillable) and Aka miso soup which makes use of a red miso for a hearty aftertaste.

For those who wish to treat themselves, there is the A5 Miyazaki Sirloin Gyukatsu. This is Kyoto Katsugyu’s most premium Gyukatsu and features perfectly marbled Wagyu.

The A5 Miyazaki Sirloin Gyukatsu simply melted in our mouths, releasing the rich flavour of the Wagyu.
