This September, Sushi-san in Lincoln Park will host a unique pop-up series called Tokyo Last Call: Season II. The restaurant will transform its lower-level “Dojo” space into a speakeasy-style listening bar.

Every weekend, a guest bartender from one of the most acclaimed Japanese cocktail bars, including Asia’s 50 Best Bars Bar Trench, Bar Nayuta, and Tokyo Confidential, will be serving drinks in their signature style. At the same time, a retro jukebox spins a curated playlist to set the vibe.

Each guest bartender will present four original cocktails featuring spirits from Suntory’s portfolio, including Roku Gin, Hibiki Japanese Harmony Blended Whisky, Toki Blended Whisky, and the newly launched Toki Black Blended Whisky.

When each bar is taking over Tokyo Last Call: Season II:

Bar Trench (Tokyo, Japan): September 4–7 To Be Announced: September 11–14 Bar Nayuta (Osaka, Japan): September 18–21 Tokyo Confidential (Tokyo, Japan): September 25–28

In addition to standard reservations for Tokyo Last Call: Season II, guests can opt for specialty experiences, such as a seat at the guest bartender’s bartop for $145 per person, which provides a front-row experience.

This includes a guided, interactive tasting of all four signature cocktails, select paired bites from Sushi-san, and a more intimate insight into each featured bartender’s artistry.
