Even Japanese people sometimes come across strange foods in Japanese society. だいやめDAIYAME (Japanese shochu)a is a good example.
It's made only from sweet potato and 麹koji, but still has a strong lychee flavor.
As a Japanese person, this is one of the Japanese alcoholic drinks that I would like people around the world to try.

This is good cut with rocks & soda for a refreshing first drink of the evening. It gets less like lychee and more like a fresh ishiyaki potato when you cut it with hot water
Unusual post, but yes. From what I understand, they do a kind of carbonic maceration, almost like orange wine, then vacuum distill it at a lower temperature so they can preserve the fragrance. That lychee note is unmistakable. Not your father’s imo shochu.
After living in the Kyushu countryside for seven years, if I never have to drink imo (sweet potato) shochu again, I will be very happy. It tastes like an old alcoholic man.
