Chef-owner of Yamato, Max Wang, is set to open a new Japanese restaurant and dedicated sake bar in Edinburgh.
The new venue, called Nishiki, will be located on Morrison Street in the city’s west end and is expected to open in August. The 40-cover restaurant will be one of Scotland’s first sake-dedicated bars, with the drinks menu built around the famous Japanese beverage and food inspired by izakaya-style dining – Japan’s answer to a gastropub. The all-day menu includes breakfast, lunch, afternoon tea and dinner, with a focus on sharing plates and real Japanese flavours.
Designed in a Japandi style – a blend of Japanese minimalism and Scandinavian simplicity – the interior will feature wood, steel and washi paper textures, with both counter and communal seating.
Max Wang said, “With Nishiki, we wanted to create something new for the city. We’ve visited lots of izakayas during our trips to Japan and really wanted to bring the concept to Edinburgh. We have designed the space to be welcoming for everyone. A bright, communal environment where people can come together to enjoy fantastic food and drinks.”
The venue is currently under development and is expected to open ahead of the festival period.
