Ask about the Flower farms—Farm Tomita, Flower Land, & Shikisai-no-oka, Shirahige Waterfall, and Shirogane Blue Pond. There’s a ramen restaurant in Flower Land that only opens in the summer, enjoy the beautiful drive around the Patchwork Road, on your way back before sunset, instead of your hotel, have the driver drop you off at the Mount Moiwa Ropeway Entrance.
