TOKYO: One of the highlights of this year’s Tokyo Tokyo Delicious Museum is a Palestinian booth featuring “exotic Arab Mediterranean cuisine.”

The Al Mina booth features Palestinian dishes from the well-known and popular Al Mina restaurant in Tokyo.

Visitors can enjoy pita bread with humus (chickpea paste), sandwiches filled with spicy bean croquettes and an extensive range of desserts. Favorites include maklobeh (chicken with rice), falafel wraps, kunafeh and a dessert featuring Dubai chocolate.

Chef Shadi Bashiyi learned the importance of food through family meals before gaining more than eight years of experience in Italian cuisine and training across various countries. After opening AL MINA in Japan, he has merged traditional Middle Eastern techniques with Japanese refined taste sensibilities. 

He serves as the chef for Middle Eastern VIP guests visiting Japan and partners with five-star hotels to provide special halal cuisine for royal family members.

The Tokyo Delicious Museum is a food festival that runs for three days in May and features cuisines from around the world.
