    Is that raw enoki? I thought only home hobbyists did that. Is the restaurant in Japan?

    Looks good. Not that it maters, but ajitama is just the name for a marinated egg, so ajitama ramen basically means ramen with an egg. Normally ramen is named based on the type of broth. Tonkotsu, shio, miso,…
