Traditional Shabu Shabu in Hamamatsu | A Japanese Culinary Masterpiece
My aunt took me to Kisoji in Hamamatsu, a traditional shabu shabu restaurant that completely blew me away. This was nothing like the shabu shabu spots you see abroad—every detail here was refined, intentional, and absolutely beautiful.
We started with chawanmushi, a silky egg custard layered with different types of seafood—it was so creamy and delicate. The tempura was crisp perfection, and the star of the show, of course, was the shabu shabu, gently cooked at the table in a light dashi broth that brought everything to life.
