This isn’t really new, mislabeling fish is pretty common across the world, especially for end point consumers who really couldn’t tell the difference between different species after they’ve been cut up.
I’m not sure how you’d mistake Escolar for tuna, they’re completely different colors. Tuna is one of the easier ones to identify, though the specific species could be more difficult.
I actually like escolar sushi quite a bit and one of my favorite places serves it, though due to its gastrointestinal effects I usually don’t get more than a few pieces of it.
