Shokupan (milk bread) do you know how to make it more rectangular?

    I love Shokupan and it was a while since I made it so this time I tried with my new loaf pan with a lid.

    The result was not perfect so I decided to ask here:

    do you got any suggestion to make it more “sharp” on the top? I would love to try to get a perfect rectangular shape on the top… but maybe I just need to proof it a little bit longer and use a little bit more dough.

    I also made one with my old mold without a lid, it came out well as usual (second photo).
