We are so poor in Singapore that we have never heard of "her". Better fact check her stories.
Big fan and I truly adore your content and transparency. I will say just one thing; not all fish is better served fresh – many types of fish taste better after being cured for at least a few days, nothing added even, just simply left in the fridge and some fish is certainly better fresh as you say.

Real fine dinning cooking is working with wat you got in your surroundings and still be able to create taste and art.
