Sapporo miso ramen has quite the history behind it. It’s becoming more popular outside of Japan thanks to the additional savoury, nutty flavours that miso lends to the ramen soup, but it’s such an interesting dish that people should know more about it!
Jun-Sumi style is a miso ramen style in Sapporo that came about from Sapporo Junren and Sumire, two very famous and popular restaurant chains who were each started by the sons of one woman, Akiko Muranaka. This ultra-thick, savoury, red miso-based soup is synonymous with Sapporo ramen, and often touted as a must-try when you visit the city.
