The aged WAGYU beef is an art in my view. Beef aging or aging is a process of preparing beef for consumption, mainly by breaking down the connective tissue. That process give the raw meat a special favor. The quality beef plus the technique, that is, that is art of aging. The wagyu slices, rice, and yolk are the presentation of this kind of art. Awesome!
