Kaiseki (懐石) or kaiseki-ryōri (懐石料理) is a traditional multi-course Japanese dinner. The term also refers to the collection of skills and techniques that allow the preparation of such meals and is analogous to Western haute cuisine
In Feb 2018, due to renovations of its original location, Kichisen is holding a collaboration of Mizuki, another restaurant inside Ritz-Carlton where the dinner took place, to provide seasonal dishes.
Erratum:
At 6:35 Minomo (煮物) should be spelled Nimono
